Last week we had a few friends over for dinner and so I decided to do more of an informal meal consisting of appetizers. One of my mom’s specialties are her mouthwatering homemade stuffed mushrooms. I’m not a huge mushroom fan but I will sure dig into that mushroom stuffing! I must say, food always tastes better when someone else cooks it… but these are good contenders next to my mom’s!
Ingredients
• 1 package cream cheese, softened
• 1/4 sour cream
• 4 large portobello mushrooms
• 1/2 green pepper
• 2 green onions
• 4 pieces of bacon, cooked
• 1/2 tsp minced garlic
• 1/3 cup mozzarella cheese
• 1/4 parmesan cheese
Directions
Cook bacon in frying pan. Dice half of a green pepper and throw into the frying pan once bacon is cooked and removed (I like to use some of the bacon fat as cooking oil). In the meantime dice the bacon and green onions and set aside. Wash mushrooms, dry and dig the inside of them out (if you like mushrooms a lot, you can save the insides to add into the stuffing mix. Once the green pepper is cooked, let the heat simmer down and once heat at a lower temperature add the cream cheese, onion, bacon and minced garlic into the pan. Once the cream cheese begins to soften and melt (it will be very thick) add in the mozzarella and parmesan cheese. When everything is semi melted, throw the mixture into a bowl, top with sour cream and mix well. Add black pepper and salt to taste and squeeze a little bit of lemon for extra flavour (optional). When the stuffed mixture is mixed, spoon into each hollow mushroom. Preheat oven to 375 degrees F. Line backing dish with some butter before putting mushrooms in. Bake for 25 minutes, or until mushroom caps are dark brown and piping hot. Garnish with parmesan cheese and enjoy!

Put frying pan mixture into a bowl and add sour cream. Add salt and pepper with a hint of lemon juice.Mixture spooned into mushroom caps. Baking dish lined with butter and mushrooms ready for the oven.Cooked stuffed mushrooms garnished with parmesan!
