This Christmas season has been one of the busiest, I don’t know if its because I have two kids or maybe it’s because I am busy writing on here!? To say the least, I do like to be busy… but I am really looking forward to the New Year where everything seems to slow down and I can catch my breath again! Baking is one of those things I try to avoid if both Jack and Max are awake. I enjoy baking and cooking but without distractions, unless Toopy and Binoo is on, then we’re good! There has been a few episodes where Jack has ‘helped’ me make something and we have accidentally put a little to much of this or that… I guess those goods are extra special ;) I’m sharing a simple recipe no bake cookies for those of you that are busy with kids, need a last minute item or just enjoy a little chocolate and peanut butter combo.
Ingredients
• 2 cups sugar
• 1/2 cup milk
• 1/2 cup butter
• 1 teaspoon salt
• 3 tablespoons cocoa
• 3 cups oatmeal
• 1/2 cup peanut butter
• 1 teaspoon vanilla
Directions
• Place sugar, milk, butter, salt and cocoa into a cooking pot
• Mix ingredients together in cooking pot while they begin to heat up
• Once the ingredients come to a boil – mix the oatmeal, peanut butter and vanilla into the cooking pot
• Once all ingredients are mixed together and coated evenly, scoop cookies onto parchment paper
• Allow to cool *I put mine if fridge to speed the process
