One of my favourite go-to recipe’s is Buffalo Chicken Wraps. They are healthy and simple to make – you can add or subtract any ingredients to your liking! At the beginning of the week, I make a batch of these wraps for Brent to take to work. If we plan on eating them throughout the week, I avoid adding lettuce so the wraps will stay fresh longer. Brent and Jack usually eat their’s with the rice and corn filler, and sometimes I use lettuce as my filler.
Healthy Buffalo Chicken Wraps
Ingredients:
• 3 cooked chicken breasts
• 1/2 cup of Frank’s hot sauce (more or less depending on your taste buds)
• 1/2 cup of plain greek yogurt (add more or less for desired taste)
• 1 cup of chopped romaine lettuce or spinach
• 2 cups of cooked rice
• 1/2 cup of corn
• 2 green onions
• 1 handful of cherry tomatoes or 1/3 cup of diced tomatoes
• 1/2 cup of cheese
• Whole wheat tortilla wraps
* Sometime’s for extra flavour, I add Bacon Ranch dressing on top of the wrap! (avoid if you want a healthier wrap)
Directions:
• Cook chicken, rice and corn (I usually throw the corn into the rice cooker with the rice)
• Cut chicken breasts into bite size pieces
• Cut green onions and tomatoes
• Shred cheese
• In a bowl combine chicken, Frank’s hot sauce, plain greek yogurt, cheese, green onions and tomatoes, mix until well blended
• Lay tortilla wraps out and scoop the rice and corn or lettuce/ spinach onto each wrap
• Scoop the bowl mixture of chicken/ vegetable’s onto each wrap
• Fold wrap and enjoy!
