We are at it again, whiping up more Easter goodies and I swear these are the last! I wasn’t planning to post this recipe but after I made them, I couldn’t get over how amazing they tasted. First of all, I’m not over the moon jumping up and down for a sugar cookie, but I knew the kids would love eating decorating them. To my surprise these cookies are soft, chewy and everything I love about a cookie. To top it all off, the frosted icing is just as delicious- so good that I caught Jack eating it right out of the pastry bag. Here is the recipe so you can make these yummy sugar cookies!
Sugar Cookie Ingredients
• 2/3 cup shortening
• 2/3 cup butter
• 1 1/2 cups white sugar
• 2 eggs
• 2 teaspoons vanilla extract
• 3 1/2 cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon salt
Directions
Preheat oven to 350 degrees. In a large bowl using an electric mixer, cream together the shortening, butter and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt into the creamed mixture with a spoon or use your hands until the dough forms together. Roll dough out on a lightly floured surface and cut out shapes with your easter-shape cutters, re-roll and cut scraps. Arrange cookies on parchment-lined baking sheets. Bake 10 to 12 minutes until bottom is light brown *they will come out soft but harden as they cool. Once cool, decorate using the frosted icing recipe below!
Frosted Icing Ingredients
• 4 cups confectioners’ sugar (icing sugar)
• 1/2 cup shortening
• 5 tablespoons milk
• 1 teaspoon vanilla extract
• food colouring
Directions
In a large bowl, cream together the confectioners’ sugar and shortening until smooth. Gradually mix in the milk and vanilla with an electric mixer until smooth, add more milk if you want fluffier icing. Colour with food colouring. Decorate!
