Over here we have been baking up a storm because some pre-easter goodies are perfect to start off this week, especially with the weather being on the chilly side again. Can you believe Easter is almost here? AND I have a little fella who will be turning one a week later! I’m still trying to wrap my head around the fact that I have a two and a half year old and an almost one year old, boy its been a busy few years but it sure has been the best! I will share another update on the boys once we have celebrated Max’s first birthday.
Today I am sharing how to make these Chocolate Easter Egg Nests that require three ingredients, candy coated eggs and are ready in twenty minutes… thats what I like to call easy peasy baking ;)
Ingredients
• 1 package milk chocolate chips
• 1/2 cup peanut butter
• 12 oz chow mein noodles
• candy coated chocolate eggs
Directions
Prepare 2 muffin trays by spraying cooking spray inside the tins. Combine chocolate chips and peanut butter into a microwave safe bowl. Melt mixture in 30 second intervals and stir inbetween to avoid burning the chocolate. Once the chocolate and peanut butter are melted, fold in the chow mein noodles. When the chow mein noodles are covered in chocolate, scoop mixture into the muffin tins and form a nest by building up the sides. Place the candy covered eggs into the nest before the chocolate hardens. Place the chocolate nests in the fridge for 15 minutes to harden. Once the chocolate easter nests harden, they will pop right out if the tin with a spoon! Enjoy :)
I hope you enjoy this recipe as much as Jack does!!!

These are so cute! Do you think pretzel sticks would work instead of chow mein noodles?
Kassandra says
Yes, I think so, they might be a little thicker to form into a nest but it’s worth a try!! Maybe break the pretzels a little before hand :)
